Microgreens are young vegetable greens harvested shortly after the first leaves appear. Although small, they contain concentrated flavour and a high level of nutrients.
Chefs prefer them for their texture, colour and ability to elevate the taste of a dish.
They are grown in clean trays under controlled light and airflow, which gives them better flavour, higher nutrition and a crisp, fresh finish.
From Sprouts to Fully Grown Greens: What’s the Difference?
Sprouts (2–4 days): Low to medium nutrition density with light vitamins, high moisture, and moderate enzyme content. Flavour is mild.
Microgreens (7–14 days): Very high nutrition density, rich in vitamins A, C, and K, antioxidants, and essential minerals. Nutrient levels can be 4 to 40 times higher than mature greens. Flavour is strong and vibrant.
Baby Greens (15–25 days): Medium nutrition density with good vitamin content, some antioxidants, and mild fibre. Taste is gentle and mild.
Fully Grown Leaves (30–60 days): Medium nutrition density with moderate vitamins, high fibre, minerals, and hydration. Flavour is mature and well-developed.
